The best jerk chicken ever.

Spicy, sweet, crispy this chicken has it all.

Ingredients:

🔹4-5 cloves of garlic

🔹1 medium sized red onion

🔹1 teaspoon ground cinnamon

🔹1 teaspoon allspice

🔹 1/2 teaspoon ground cloves

🔹 1 teaspoon dried thyme

🔹 1 handful of fresh parsley

🔹 1/4 teaspoon black pepper

🔹 pinch of salt

🔹 1 teaspoon of ground ginger

🔹 1-2 teaspoons dried chilli flakes

🔹 2 teaspoons of honey

🔹 2 teaspoons white vinegar

🔹 Juice of 1 lime

1️⃣ Blitz all ingredients in a blender, smear over the chicken ensuring full coverage.

2️⃣ Squeeze the lime juice over the top and cook until the internal temperature reaches 75°C

Notes:

🔸 I used ground ginger and dried chillis but fresh would have been much better

🔸 It’s advisable to wear gloves when handling the marinade but I’d like me you didn’t then wash your hands thoroughly before using the bathroom. (I can’t stress that enough)

🔸 This smells absolutely incredible so be prepared for jealous glances from neighbours and passers by.

🔸I know there’s a lot of ingredients in this one but trust me, don’t omit anything if possible because all the different spices create different levels of flavour. You’ll understand when you taste it.

🔸Marinade should be allowed to sit on the chicken for at least 2 hours but preferably overnight.

🔸I used a free range organic chicken and it tasted absolutely ridiculous but this will work well on any cuts of chicken, pork or ham.
