White Chocolate Raspberry Protein muffins

Myself and my daughter really enjoy baking together and here’s what we made this morning:

White chocolate and raspberry protein muffins. These can be made well in advance, store well in the fridge and work really well for meal prep and as a bonus they’re a great way to sneak fruit and extra protein into your kids diets.

🔸1 Ripe banana (80g)
🔸25g Whey protein 
🔸150g Ground oats
🔸Sweetener of choice (I use stevia)
🔸1/2 Teaspoon baking soda
🔸1/2 Teaspoon baking powder
🔸2 Whole eggs.
🔸125g Raspberries 
🔸25g white chocolate
🔸150g 0% Fat Greek Yogurt
🔸100mls unsweetened Almond milk

🔹Pre heat your oven to 180°C/356°F
🔹Blitz the oats in a food processor until fine.
🔹Mash the banana with a fork,
🔹Add all the remaining ingredients 
🔹Mix well and then add the mixture to baking cases.
🔹Bake in the hot oven for 15-20 minutes or until risen and golden across the top, do not over cook these or they dry out.
🔹Leave to cool complete before serving.
