Makes 12:
Ingredients:
- 80g vitafibre powder
- 100g vanilla whey
- 1 Teaspoon of almond essence
- 50g almonds
- 30mls water
- 1/2 teaspoon baking powder
Method:
- Heat the water and the vitafibre powder in pan on a low heat, keep whisking the mixture until it turns transparent
- In a dry bowl mix the remaining ingredients
- Pour the vitafibre into the bowl with the dry ingredients and mix to form a stiff dough. (If it seems to dry, you can add a little water to loosen it)
- Shape the dough into a loaf shape (pictured below) and bake for 10 minutes at 180ºC
- When its golden and solid, remove it from the oven and allow it to cool completely before cutting it
- Cut it into long strips and return the biscotti to the oven for a further 5-10 minutes turning once half way through.
- Allow the biscotti to cool before serving, (when it cools it will turn brittle)
